Executive Chef Guy Bedard

A native of Temagami, Ontario Chef Guy brings nearly 35 years of culinary experience to Callander Bay.  Chef Guy found his 'calling' to great tasting food as an 8 year old child when he saw a recipe for Sole Almondine on the back of a spinach bag and asked his mother to purchase the ingredients so he could make it.  After that success he was on his way making homemade soups - even providing his Uncle Paul with step by step instructions so he wouldn't mess up the recipe!  Chef Guy graduated from the culinary program at Algonquin College and apprenticed at Fairmont Hotels where he earned his Red Seal Certification.  

When not creating great dishes at 1886 Chef Guy can be found playing guitar and spending time with his son.

Favourite Food:  Atlantic Lobster with drawn butter

Sous Chef Greg Luckey

Born in North Bay and moving to the big city as a child, Greg has returned to his roots to be closer to his family. Greg has spent many years in the kitchens of Burlington, ON most notably as sous chef at Canyon Creek Chophouse. Greg started cooking when his very active family was always busy with sports and he learned to cook between games. He then decided to do an apprenticeship expanding his knowledge and love for flavour.

When not sourcing new local ingredients Sous Chef Greg can be found cheering his Maple Leafs and Blue Jays as well as spending time with his brothers on the ATV trails.

Favourite Food: PIzza - any toppings work!!

Favourite Drink: Craft Lager especially Beau’s Lugtread

Wine Guy Shawn Carr

Returning to Callander Bay where he spent countless summers and vacations Shawn has found a tight knit community of friends with whom he attended Nipissing University while taking his Bachelor of Business Administration. Shawn enjoys great fishing days and watching the Habs beat the Leafs (not likely for awhile 'sigh'!)

Shawn previously worked at some of Canada's most prestigious restaurants and resorts such as Emerald Lake Lodge, Araxi Restaurant and Deerhurst Resort.  Gaining a love for the industry he decided to partner in restaurants in Whistler, BC such as Wild Wood and Elements then in Golden, BC with Whitetooth Mountain Bistro and Rockwater Grill.  Achieving a Wine Spectator 'Award of Excellence' in many past endeavours continues as a goal for 1886. 

Local food, craft beer, cool cocktails and enjoying the company of friends and family over a bottle of wine sounds about right doesn't it?
